Greenleaf Chickpea Salad





Ingredients:

  • Tomatoes - chopped

  • Dried cranberries

  • Shallots - chopped

  • Arugula - rinsed

  • Chickpeas - roasted

  • Salt + pepper

  • Agave Nectar

  • Balsamic Vinegar






Preparation:


1). Roast chickpeas in pan on medium heat for 2 minutes.

2). Place washed arugula on plate and top with veggies + chickpeas, dried cranberries, & salt + pepper.

3). In a seperate bowl - mix together a small amount of agave nectar and a small amount of balsamic vinegar until you reach the taste that you desire - (It should be sweet + tangy) and drizzle on salad or dip lettuce into mixutre!
