Ingredients:
Sandwich
Trader Joes Lavish Bread - Cut one slice in half
1 Chicken Breast
Egg Over Easy
Cilantro - chopped
Red onion - sliced
Radish + Alfalfa Sprouts
Shredded Cheese
Sweet Kale Salad
Dried Cranberries
Kale - sauteed in olive oil
Agave Nectar
Shredded Almonds (optional)
1). In a greased pan (I used olive oil) - cook chicken breast on medium high heat and cook to an internal temperature of 165º F.
2). Turn oven on BROIL.
3). While chicken is cooking - sautee kale in olive oil in a seperate pan on medium heat. Sautee until tender and glossy. Place Kale in small bowl and mix in dried cranberries, almonds, and sprinkle with agave nectar (this will be ready to go on plate!)
4). When chicken is finished - turn heat on medium low - crack egg in pan and cook over easy.
5). Place chicken on Lavish bread and sprinkle with shredded cheese. Place in oven on a baking sheet and BROIL until cheese is melted - watching closely to make sure bread does not burn. (about 2 minutes)
6). Remove bread + chicken from oven. Top with sprouts, onion, cilantro, and carefully add egg, and fold over bread to create a "sandwich" (making sure not to press down on sandwich - which will cause egg yolk to bust.)
