Ingredients:
Kale (Chopped)
Cherry Tomato (sliced in half)
Brown Rice (I used a 90 second pack from Aldi)
Black Beans (drained & rinsed)
Corn (drained & rinsed)
Pepper Jack Cheese (shredded)
Onion (chopped)
Olive Oil
Cilantro
Ground Turkey
Taco Seasoning
Lime Juice
Optional (salsa, greek yogurt/sour cream, guacamole, Late July Tortilla Chips)
Preparation
1).In a skillet- brown and chop turkey meat - add taco seasoning - and drain additional grease - set aside.
2). In a 5-Inch Cast Iron Skillet on medium heat - place kale on skillet and add roughly a tablespoon of olive oil. Stir and heat until kale is wilted.
3). Add in cooked taco meat, brown rice, corn, cherry tomatoes, black beans, cilantro, and onion. Cook & continuously stir for about 5-6 minutes. Top with pepper jack cheese and juice from half of a lime - serve immediately!
